Grew up in Northern NATAL, after finishing my schooling, I completed my N4, N5 and N6 at The Pinetown Catering College.
After working at the well known Brenton on Sea Hotel, I was lucky enough to be offered a position in Keswick, The Lakes District in England. This move opened new doors for me and I found myself working in South Devon in a coastal town called Torquay, in the Imperial Hotel as Breakfast Chef and later Line Chef. My career took me to Douglas – Isle of Mann, where I worked as chef de partie at the Mount Murray Hotel and Country Club.
I would say that while working at the Brasserie in London, this is truly where I fell into full swing of cooking the healthy way, being based at a health and fitness centre. My studying continued while I worked in all the well known eateries, The Boxwood Café ( Gordon Ramsey), The Roof Gardens ( Richard Branson) aswell as the The Crab at Cheaverly, voted the top seafood restaurant in the United Kingdom in 2005.I past my Professional Cookery, level 1-2 and 3 at the Westminister Kingsway College.
Now, thoroughly rooted in Knysna, and currently working as Head Chef at the Cruise Café Restaurant, at the Featherbed Company. The position enables me to move around within the five various catering locations within the Group, alongside the water and at times, on board a boat on the fabulous Knysna Lagoon, preparing dishes and buffet menu’s that have delighted many. I have learnt a lot working abroad, however we never stop learning, be it from the junior in the kitchen or perhaps a quircky comment from a sculler. The biggest blessing of all, is to have been taught the various methods of cooking, but here in S.A we can concentrate on using all our senses in the preparation and cooking process, after all I work and live in what I term , GODS Garden how could it not be close to perfect.……………….
